IPA is a term that has changed a lot since the pale ales that were first transported, in oak barrels, to the Indian subcontinent in the late 18th & 19th centuries. These beers were brewed to survive the long journey. They were relatively strong, bitter, heavily hopped, & almost certainly heaving with wild yeast. Today, IPA often means strong pale ale hopped abundantly with new world hops, often hazy, with a short shelf life. We wanted to make something that bridges that gap & brewed a barrel aged, mixed fermented beer, generously hopped with Nelson Sauvin & Amarillo hops. The resulting beer is fruity and funky with a hop character that will continue to develop over time.
